Grown by L.J. Pudney in Kongorong in the Mount Gambier GI, this chardonnay is intensely flavoured with tight disprin acid. The soils are fascinating, almost upside down, with rock at the surface warming the soil, so the roots of the plant or it's feet are kept warm, while the plant growing above the ground is blasted by Antarctic winds so very cool and maintains very high acidity meaning I can put the wine through malolactic fermentation to get extra complexity and texture. Hand Picked, whole bunch pressed, full solids ferment, indigenous yeast, matured in older french oak puncheons.
